KFC


You wish! Actually, this is much better! Its Klean Fried Chicken! Now that I have successfully completed the 6 week cooking course, I am armed with a bag load of tricks to make my version of healthy food that much tastier. Now for those on a strict diet, go right on by this post, you'll be glad you did. If however you do like your fried chicken but dread the oily cals, fret no more! I guarantee you (take this guarantee at your own risk) once you make chicken this way, KFC will need to pay you to come buy from them! Please note, I do not currently, nor have I in a very very long time, years to be exact, eat or buy KFC.


So now that we have that out the way. Let's get right to it. But first I have a secret. This isn't actually 'fried' chicken. In fact the only 'oil' involved is what is used to marinade the chicken in, I swear. It is 'oven baked to look LIKE fried' chicken. And here's how to do it. 

Appliances/Tools Needed:
Blender or Magic Bullet
Cooling/Cookie Rack
Baking Sheet/Tray
Gallon Ziploc freezer bag or Large Mixing bowl

Blended seasoning (optional):
3 stalks scalion
1 medium onion
2 cloves garlic
1 sliver ginger
pimento
1/4 cup extra virgin olive oil (evoo)

Ingredients:
3-4lbs chicken breast quarters/parts, cleaned and skin removed
Dry rub (of your choice - jerk seasoning, mrs dash, onion/garlic powder etc)
2 eggs (or egg whites) or 1/4 cup almond/coconut milk
Grounded oats (ground in a blender)
Crushed plantain chips or regular cornflakes
*honey/mustard/lime juice glaze

Method:
1. Pre-heat oven to 350 F/180 C
2. Place all blended seasoning ingredients in a blender with oil and combine thoroughly.
3. Put chicken breasts in a ziploc bag and pour blended seasoning, dry rub, eggs and milk over it, close bag and shake. Or just pour over chicken in a bowl and get to rubbing...with your hands of course. If you skip the blended seasoning then along with everything else, simply use your preferred dry rub with a few tsp of evoo just to let rub adhere to the chicken (and keep it moist).
4. Grease cookie rack and place over a greased baking tray (preferably with evoo) and set aside.
5. Mix oats and crushed flakes in a dish.
6. Dip chicken in oats/flakes mixture then place on rack over tray and put to bake for 30-35 minutes.
7. Chicken is done when it springs back to the touch and no juices run when a knife is inserted. Crust should be a nice golden brown. 
8. Heat 1tbsp honey, 1 tsp lime juice and 1tsp honey together in a small bowl in the microwave and brush on chicken in the last 2-3 minutes of cooking time. (OPTIONAL)

Serve with your favourite sides and enjoy!
