Coconut Curried Shrimp

Inspired by a simple conversation with a good friend, I decided to end Day 6 of my 21 Day Sugar Detox with some curry. Nothing special about it, but I knew my buying cauliflower in the market yesterday was a great decision and pairing it with shrimp can only be described in two words DEEEE LISHHHH! Technically its not even a word but it needs to be for how sweet this was. Or maybe that's the hunger talking? hmmm? Doesn't matter, it filled my belly and I now have a smile on my face. Can't you tell :) 

Coconut Curried Shrimp

Ingredients:
340g uncooked, deveined and clean shrimp
1 tbsp curry powder
1/2 tsp garlic powder
1 tsp evoo + 1 tbsp evoo
1 tbsp coconut milk
dash of salt

Method:
In a bowl, mix shrimp, curry, garlic powder and 1/2 tsp evoo until combined.
Heat skillet, add 1tbsp evoo then add shrimp. Set shrimp bowl aside. Toss shrimp around in skillet until it starts to turn pink. 
In shrimp bowl, pour coconut milk and mix until it is incorporated with the residue curry. Pour milk mixture into skillet, tossing with shrimp. Turn heat off and let sit for a minute before removing from burner.
Serve over cauliflower fried rice.
