Fish in Spicy Red Sauce

This recipe was inspired by a craving one night for pasta or a pasta type meal. So with what I had on hand and my lovely mandolin slicer, I made this dish of zucchini noodles with fish in spicy red sauce, aka chunky mackerel. Hey, don't knock it till you've tried. There is much to be said for repurposing what we call 'basic' food items to look and taste gourmet. And this is a classic example. Very little fuss and in quick time too. You just have to love a meal like that! I know I did.



What You'll Need;
1 Mandolin slicer , Spiral slicer or Knife
Sautee pan or skillet
Chopping board



Ingredients:
1 large zucchini
1 tsp coconut oil (optional)
1/2 small onion, diced
1 peg garlic, diced
1 7oz/200g can Grace Chunky Mackerel in Tomato sauce
mrs dash
hot sauce or scotch bonnet pepper
vinegar or lime juice
Chopped spinach leaves for garnish

Method:
Use mandolin slicer or a knife to cut zucchini lengthwise into 1/4" thick strips. Then on cutting board, use a sharp knife to cut further into noodle thin strips. Place in a bowl season with mrs dash and set aside.


In a medium hot skillet, saute onions and garlic in the coconut oil until opaque.
Add mackerel and pepper only, cover and let cook for 2 minutes.
Pour sauce into pan, stir, then gently toss (use a tong) in noodles until mixed in (covered with sauce).
Cover pan, turn heat low and leave for an additional 2 minutes.
Turn heat off, remove pan and pour noodle/fish unto plate, garnish with chopped spinach.
Serve and enjoy!
